Food Cuisines in Rajasthan

Rajasthan is place of Kings and Princes. You will find many different gastronomic inside palace boundaries as well as outside. Well, it is not easy to prepare royal food. Preparation of royal food of Rajasthan is difficult task.

It evaluated to the heights of an art, skills used in cooking. The royal cooks of Rajasthan were famous as Khansamas. Khansamas used to work differently from others, as they used to prepare unique taste in their food. They had reached to levels of art form.

Therefore, Khansamas worked at palaces of states and they used to keep their cooking methods as secret with themselves. Later on, these recipes passed on to their children. Few recipes conceded, as skills to the cooks at semi state levels.

At same time many of these cooking methods, passed to good branded hotel groups of companies. Rajasthani food and cooking was disposed like war kind of lifestyle. In medieval period of Rajasthan, there were so many different ingredients available in the region, which used to give taste to the food.

Theses ingredients used to result too good, which used to be for the quite long time and it was preferred to eat without heating them. It was more as requirement than selection. Now, Rajasthan has always faced difficulties of water but these shortage of water resulted good effect in cooking, over the green vegetables.

In the desert region of Rajasthan, over Jaisalmer region, Barmer as well as over the Bikaner, chefs use to cook food in very less amount of water. Generally, they preferred more to use milk, illuminated butter or buttermilk instead of water.

Next, good and unique feature about Rajasthani cooks were, they used mango powder, as and when tomato powder is required.

There is scarcity in the desert so, asafetida, to balance taste, in absence of onions or garlic.

Generally, you would have seen Rajasthani curries to be too red in color. However, that does not mean it is too spicy according to their appearance. Almost all Rajasthani cuisine makes highly use of ghee that is clarified butter as standard of cooking.

Rajasthani has their favorite dish called lapsi, which is prepared through broken wheat called as dalia. In lapsi, dalia is sautéed in ghee and later on it is sweetened by jaggery. If you are planning for the trip to Rajasthan than, there is lots more to have fun.
